Apple Cider Cream Pie

apple cider cream pieI think this Apple Cider Cream Pie one of the recipes I’ve made in the past few years with a name that doesn’t do it justice. Cream pies in general don’t look very dramatic in photos (though I’m pleased with this one) and they sound a little old-fashioned and dare I say boring. So, I’ll take it upon myself to make sure that you don’t overlook this Apple Cider Cream Pie. The apple cider is a playful take on the traditional apple pie and reducing the cider down so its full of intense apple flavor is a great move.  The cinnamon cream not only finishes the pie perfectly, but it’s a perfect cool down after our spicy Mexican mains. All in all, this is just the right amount of untraditionally-traditional to makes its way onto my every so unexpected Mexican Thanksgiving Menu. I usually make a double batch of the boiled cider when I’m taking the time to boil it down. It’s another ingredient that is fun and easy to keep on backup in the fridge since it keeps for a long time. And no one is ever said when I’m able to pull it out of the fridge and turn out an Apple Cider Cream Pie with only a moments notice.

  1. 1 cup all-purpose flour
  2. 1 tablespoon cornstarch
  3. 1 tablespoon sugar
  4. 1 teaspoon kosher salt
  5. 1 stick unsalted butter; diced and chilled
  6. 3 tablespoons cold milk
  7. 1 teaspoon apple cider vinegar
filling
  1. ½ cup boiled cider
  2. ¾ cup granulated sugar
  3. ¾ cup sour cream (or yogurt)
  4. ¼ teaspoon salt
  5. 5 large eggs
topping
  1. 1 cup heavy cream
  2. ¼ cup granulated sugar
  3. ½ teaspoon cinnamon
Instructions
  1. In a food processor, combine the flour, cornstarch, sugar and salt. Add the butter and pulse until the mixture resembles coarse meal. Stream in the milk and vinegar. Pulse until the dough just comes together. Combine dough into a ball and flatten into a disk. Wrap in plastic and refrigerate until chilled (30 minutes). cider cream pie dough chillingOn a floured counter, roll out the dough and place into a 9-inch pie pan. Trim the dough and embellish as you see fit: crimp, fork, flute, etc. Preheat the oven to 425° F. Chill the crust in the fridge until firm (15 minutes). This crust is a little fussy. It’s best if blind baked, but it also has a tendency to burn on the edges. To blind bake, use pie weights or dried beans to fill the pie shell (ine with foil or parchment to prevent sticking). Bake in the lower third of oven for 15 minutes. Remove parchment and pie weights. If edges have already contracted, push them back up the sides of the pan with a spatula. Cover the edge of the crust with strips of foil and bake for about 15 minutes longer, until the crust is just set but not browned. Press the bottom of the crust lightly to deflate it as it puffs; let cool (keep the foil strips on for the second baking). Lower the oven temperature to 350° F. Whisk in ¾ cup of the sugar, sour cream, and salt, then the eggs. Using a mixer, beat the heavy cream with the remaining ¼ cup of sugar and the cinnamon until firm. It's slightly better to do the whipped cream just before you serve, but it holds up remarkably well even the next day. Boiled Cider
  1. 2 cups apple cider
Instructions
  1. In a medium saucepan, boil the cider until reduced to ½ cup (10 minutes). Let cool.
Notes
  1. I often do this step a day ahead. And it never hurts to make a double batch. This stores really well in the fridge.
