Pretzel Peanut Brownie Bites

closeup pretzel peanut brownie bitesNow I’m not going to lie and tell you I always make box brownies, or even that I think these Pretzel Peanut Brownie Bites are the best brownies I make. But, sometimes you have enough going on, or you’re working really hard making one of the other dishes. Or you ran late, or what you planned to make didn’t come out well. For all of those occasions, you need a recipe like this. These little Pretzel Peanut Brownie Bites are cute, satisfying and so quick you can make them at the last second. I like to use low-fat brownie mix, like no pudge fudge for these. Since you’re adding the espresso powder and the topping, you won’t miss the extra calories, but any brand works just fine. The tiny size of the Pretzel Peanut Brownie Bites makes them perfect for parties. And their playful peanut and pretzel topping just screams Super Bowl party. It’s really fun to use this recipe when baking with kids too, because it’s really quick, which is perfect for their short attention spans, but still includes cracking an egg, every kid’s favorite kitchen task, and includes sprinkling on the crunchy toppings. Finally, these Pretzel Peanut Brownie Bites hold up quite well if you want to make them ahead of time, even by a couple of days; just store them in an airtight container. While I can’t guarantee that your preferred team will win the big game, I can ensure your Pretzel Peanut Brownie Bites will be the hit of the dessert tray. After all, almost everyone loves brownies and these cute little Pretzel Peanut Brownie Bites take it up a notch with their crowd-pleasing toppings.

Ingredients
  1. brownie mix of your choice
  2. 1 cup pretzels with salt; crushed
  3. 1 cup peanuts
  4. 1-2 tablespoons instant espresso powder
  5. Sea salt, if the pretzels and peanuts are unsalted
Instructions
  1. Preheat the oven to 350° F.
  2. Make the mix according to the box instructions.
  3. Add the instant espresso powder to the batter.
  4. Spoon into mini-muffin pans. Top with the crushed pretzels and peanuts (and the salt if using). Bake according to the box instructions. Mini-brownie bites cook much faster than a whole pan, so if they don’t recommend a specific time start with 12 minutes. I like them a little underdone so they’re soft and chewy. You may need to cook them up to 20 minutes.
  5. Use a toothpick to test if they’re done. If you stick a toothpick in the center of the brownie and it comes out clean, it’s cooked through.
