Summer, Summer, Summer, wherefore art thou… Fall? Really? It’s Labor Day weekend already? But it’s not here just yet, so I’m going to squeak in a few more truly Summer recipes, like this Rose and Raspberry Float complete with fresh raspberries and a gorgeous pink color. Added bonus, it looks super fancy and elegant, but all you need is a blender and no one will ever know the ice cream is only sorta homemade. Can you just buy raspberry ice cream pre-made for this Rose and Raspberry Float? Maybe. I set out to buy some and discovered three and a half stores later that I was making it myself… and way too late in the game to start from scratch. But it was a good lesson in impressing your guests with ease. Start with a really good vanilla and add your own special twist, and voila! homemade ice cream. Go nuts with wacky flavors, or pick something that will pair with a special soda like my Rose and Raspberry Float.
- Fentiman’s Rosewater lemonade* (4-6 bottles for the whole quart)
- 1 quart really good vanilla ice cream
- 8 ounces quick frozen raspberries
- About 30 minutes before you’re ready to make the ice cream, put the fresh raspberries in the freezer. This will help them stay a little more intact when you blend them into the vanilla.
- Let vanilla ice cream sit out at room temperature for a couple of minutes, then squeeze or scoop it out into a blender or food processor being careful to preserve the container.
- Blend until smooth.
- Add in the fruit and blend or process just until incorporated. Spoon back into the container.
- Refreeze until solid. This will take a couple of hours.
- When ready to make your floats, scoop the ice cream into wine glasses for extra drama.
- Top with the Fentiman's Rose Lemonade.
- Serve with a straw and garnish with edible rose petals if you like.
- *Can’t find Fentiman’s soda? Just use a sparkling pink lemonade (like Lorina brand) and rosewater to taste - add the rose water a little at a time and make the soda, then add the ice cream.
- Also, if you’re trying to go easy on the fat, this works well with raspberry sorbet. It’s a whole different dessert that way.

I can’t help but think this would be a lovely dessert for a tea party. Sometimes monochromatic flowers are all you need.

Seriously, this does sound AMAZING! I need to get my hands on some of that rose lemonade. Great idea for the ice cream, as well. I know this is a tasty combo, because I sometimes make raspberry rosewater meringues that the whole family devours. Added to my “TRY SOONER THAN LATER” list.
