Smoked Salmon on a Potato Pancake

Cooking with Cedar Kitchenette: Smoked Salmon on a Potato Pancake came about when a mutual friend introduced me to a fellow Philly blogger Laura of Cedar Kitchenette. She’s an accomplished baker and still in high school- so cool. We decided to meet up, make brunch and talk tricks of the trade. Laura let me pick the menu and I decided on this lovely brunch pizza of sorts based on a Martha Stewart recipe: Smoked Salmon on a Potato Pancake. We were both really happy with how it came out, and so were our guests. It’s always hard to take great pictures when you’re distracted and hosting guests, so of course I made it again the next day to get me perfect shots. It wasn’t exactly torture to eat it again the next day and I still had all of the ingredients around. This gave me the perfect opportunity to perfect my technique. Since I no longer had guests, I made a small 8-inch serving just for me and I have to admit the smaller size was much easier to maneuver if less impressive. Decadent Mac n’ Cheese

As part of the modern update for our Midwestern potluck, my test kitchen crew and I decided we absolutely had to take on Mac n’ Cheese. Of course there are a million recipes for it out there, but hey, why not one more. In my opinion, this is where it’s at anyway. Mascarpone and good gruyère… mmmm… The funny part is, that when we tested the update for Decadent Mac n’ Cheese we originally added lobster meat for the dramatic and fancy update ingredient. Though it was good, as we sat around eating and generally enjoying the dish, we all agreed that the lobster was an example of just more, not better. Lobster is so special and delicious (and expensive, particularly when not on the East Coast) that you should probably just save it to be eaten plainish, à la my Lobster Rolls or Lobster Salad with Goat Cheese Vinaigrette. That’s not to say it wasn’t good, we just felt that we didn’t get that much bang for the extra bucks. Lemon Raspberry Tiramisù

It’s still lemon season, so you’re still getting lots of lemon recipes from me, like this Lemon Raspberry Tiramisù. But I have a confession: I make this delicious Lemon Raspberry Tiramisù year round. Not only is it that good, but lemon raspberry desserts are my favorite- good thing it’s a common combination. My Lemon Raspberry Tiramisù is a great recipe to have in your back pocket because frozen raspberries work just as well if not better than fresh. In fact it’s easy to keep all of the ingredients around as they have long shelf lives. I am a huge proponent of having a well stocked pantry. It really takes the stress out of entertaining. And I love having fruit desserts that can rely on frozen berries. My Lemon Raspberry Tiramisù feels special, fresh and light in the winter when raspberries can be less than special tasting. Even when you do find them in the supermarket and they look to be of reasonable quality, they’re always at an exorbitant price. Substituting frozen berries really helps make this dessert more budget conscious.
