Pretzel Peanut Brownie Bites

Now I’m not going to lie and tell you I always make box brownies, or even that I think these Pretzel Peanut Brownie Bites are the best brownies I make. But, sometimes you have enough going on, or you’re working really hard making one of the other dishes. Or you ran late, or what you planned to make didn’t come out well. For all of those occasions, you need a recipe like this. These little Pretzel Peanut Brownie Bites are cute, satisfying and so quick you can make them at the last second. I like to use low-fat brownie mix, like no pudge fudge for these. Since you’re adding the espresso powder and the topping, you won’t miss the extra calories, but any brand works just fine. The tiny size of the Pretzel Peanut Brownie Bites makes them perfect for parties. And their playful peanut and pretzel topping just screams Super Bowl party. It’s really fun to use this recipe when baking with kids too, because it’s really quick, which is perfect for their short attention spans, but still includes cracking an egg, every kid’s favorite kitchen task, and includes sprinkling on the crunchy toppings. Finally, these Pretzel Peanut Brownie … Continue reading

Junk Yard Dog Mix

Junk Yard Dog Mix reminds Dirty Laundry Kitchen of Greek philosophy. Really? Yes. The notion of a sense of taste isn’t a new thing. Aristotle wrote about sweet and bitter in On the Soul, circa 350 B. C. Much more nuanced writing about the sense of taste came out of India even earlier. Combining and understanding food in response to the human palette is probably as old as eating. It told us how to find calorie-dense foods and how to avoid poisonous ones. So, if you’re a snack combiner and you have your own special-weird combo that works for you, be it dipping fries in your chocolate shake, or putting potato chips on you tuna sandwich, commune with the ancients and revel in trying my big dog version of junk food mix: Junk Yard Dog Mix, just in time for Super Bowl Sunday. Forget the Puppy Chow, I’ve focused in on the salty, kept the chocolate on the bitter side, and added popcorn with a spicy kick. Think perfectly balanced junk food. And don’t forget to brainstorm additions to make Junk Yard Dog Mix perfect for you. … Continue reading

Mushroom Sliders

It’s hard to believe that it’s already Super Bowl time, but it is, and this year, I’m expanding on last year’s menu with these Mushroom Sliders. Super Bowl Parties tend to be meat and more meat, with a side of junk food. Of course, there’s plenty of that at my Super Bowl Party, but it’s also nice to provide a veggie option for guests. These Mushroom Sliders are so good, you’ll have to make enough for the omnivores too. Since I already made the brioche for the pulled pork, it’s nice to pick another sandwich that guests can serve themselves. This way I’m watching the commercials and not waiting on my friends. I pile a plate high with all the components and set it next to the crockpot of pulled pork and basket of fresh brioche rolls. This way people can eat when they like. Or they can just snack on the other treats on the menu. Either way, these Mushroom Sliders will disappear so make sure you get one before the party gets started. And don’t wait for the Super Bowl to make these Mushroom Sliders; they’re great during BBQ season, too. … Continue reading

Pulled Pork Sandwiches

I realize that a recipe for pulled pork is a kitchen version of an oxymoron. But I tried to write mine down in a way that will give you the confidence to pull off the sort of clean-out-the-fridge improvisation that makes the best pulled pork. While bbq sauce varies region to region, all over the country and some are sweet and smoky, some spicy, some vinegary and thin, all sauce has some combination of the same elements. It’s how they are balanced that makes the difference. I really like all the different sauces at different times, but for pulled pork, I emphasize the sweet and smoke a little more. I also like a thicker sauce so it doesn’t soak the bun through immediately. I am going to list some common ingredients I’ve used organized by element. You can use any of these, and really, using them all will contribute to a more complex the flavor. Just keep them balanced. Also, I’ve never written down this recipe before and the brioche recipe hadn’t been used in awhile, so there were lots of surprises, “mistakes” (or opportunities for technique development) and messes this past week. I’ll share them with you so you … Continue reading

Buffalo Chicken Dip

This Buffalo Chicken Dip should probably be categorized as an illegal substance. While in general, I plan to share mostly my personal recipes, I can’t take credit for this one. Nor can I ignore it if I’m responsibly posting a Super Bowl Party menu. I mean, this Buffalo Chicken Dip is really, really good. My childhood friend Sherrie shared it with me several years ago and I probably wouldn’t have bothered with it if she hadn’t served it first. I’m not really a prepared food person. Or a dip person. And I try really hard not to be a junk food person. But this recipe is all of those things and more. So Sherrie, this one’s for you. And Frank’s Red Hot Sauce, for thinking of this. Or copying it from someone else and marketing it. For a large group, you might want to double it. And the leftover Buffalo Chicken Dip makes a great base for a phenomenal pizza. … Continue reading

Cherry Oatmeal Cookies

For me, a Super Bowl means football. Football means the Packers. Packers mean Wisconsin. Wisconsin means sour cherries. This is quite the causal chain, huh? If you followed me this far, you’ll probably agree that the obvious dessert for a Super Bowl Party is Door County Cherry Oatmeal Cookies. I can’t really claim credit for these cookies as an original idea. The recipe is based on the cookies I used to have in Door County at places like Wagon Trail and Seaquist Orchards and years of making the Toll House recipe for chocolate chip cookies. Even though I now make the Jacques Torres recipe (always), I still have the Toll House memorized and I use it as the basis for most of my cookie recipe improvisations. These cherry oatmeal cookies are really easy to make. They’re really delicious. You could make the dough this weekend and store it in the fridge until next weekend. Then you could preheat the oven during the third quarter and surprise your guests with hot cookies during the fourth quarter. Or you can bake Cherry Oatmeal Cookies ahead of time and serve them whenever. And once you’ve learned how to make these, they just might … Continue reading
