Assemblage Cooking: Leftover Summerado Salad Sandwiches

It doesn’t get much easier than this assemblage meal. Marc and I both love leftovers, which force you to get creative in a hurry and allow you to have a really great meal at a moments notice. 1 pound frozen or fresh shrimp (this is enough for 4-6 sandwiches) 1 lime 2 tablespoons butter salt and pepper 4 rolls, wraps, or naan leftover Summerado salad Heat a frying pan to medium and brown the butter. When it’s beginning to separate and look nice and golden, add the lime zest. Cook for a minute or two. Add the shrimp. Cook until just cooked through and tender- a minute or two for fresh, 5-7 for frozen typically. Add salt and pepper to taste and spritz the juice over the shrimp. Toast your bread.
